A Taste of Austria: Quick and Easy Pumpkin Seed Oil Salad

A friend’s recommendation led me to buy Styrian pumpkin seed oil during my trip to Austria. Clueless on how to use it, I did some online research, gathered some inspiration and created a delicious salad using what I had on hand. Here’s what I came up with.

Delicious salad recipe with pumpkin seed oil

Ingredients (6 servings):

  • 400g feta cheese
  • 3 cups chopped lettuce
  • 1 cup chopped cucumber
  • 2- 3 sliced green onions (optional)
  • 3 diced apples
  • 1/2 cup walnuts
  • 1/2 cup dried cranberries
  • 1/2 cup of pumpkin seed oil
  • 1/2 cup of apple cider vinegar

Note that If you don’t have pumpkin seed oil on hand, you can still enjoy this salad with a substitute such as olive oil.

This recipe is super fast!

  1. First prepare the vegetables
  2. Add the apples, feta cheese, walnuts, and cranberries
  3. Whisk together the pumpkin seed oil and cider vinegar
  4. Pour the dressing over the salad, toss to coat, and enjoy! Bon appétit!

The salad picture above is an AI-generated image. My real salad didn’t look quite as perfect. I definitely need to work on my food presentation skills!
